850gChicken Thigh
½ tspsalt
½ tspblack pepper
1 Tbsplight soy sauce
1 Tbspcooking wine
1egg yolk
1 TbspSweet Potato Starch
1.5 tbspsOlive Oil
For Stir Fry
Instructions
Step 1
Slice chicken thigh meat into 1-2cm across pieces, marinate them with salt, black pepper, light soy sauce, cooking wine, sweet potato starch, egg yolk to mix well, then coat with a layer of cooking oil.
Step 2
Prepare and dice garlic, ginger and green onion; Cut dried red chili with scissors and add in Szechuan peppercorn.
Step 3
Pour adequate amount of cooking oil in a pot to heat up, put marinated chicken thigh meat in the oil one at a time on medium heat to deep fry until they turn brownish, remove from the heat and put them back in the oil for a second fry until they become completely golden brown.
Step 4
Put a small amount of cooking oil in a skillet, add in diced garlic and ginger and dried chili and Szechuan peppercorn to stir fry for 30 seconds, then put in deep fried chicken bites in to mix well. Finally season chicken with a small amount of salt, chicken powder, sesame oil and dark vinegar, mix together and garnish with chopped scallion, it’s ready to serve.
