Instructions
Step 1
Mash chickpeas with a fork until most are broken up.
Step 2
Add avocado and mash/stir until creamy.
Step 3
Add mustard, lemon juice, onions, bell pepper, salt and pepper and mix well.
Step 4
Spoon into 4 lettuce leaves, and garnish with veggie toppings as desired.
