Instructions
Step 1
In a small bowl, whisk together all the dressing ingredients.
Step 2
In 4 bowls, arrange the baby salad leaves and top with cubes of cheddar.
Step 3
Core and slice the apples into thin strips.
Step 4
Toss with the lemon juice to prevent their turning brown, then arrange on the salads.
Step 5
Top each bowl with walnuts, cranberries and scallions, then drizzle with the dressing and serve.
