Step 1
Chop the onion into bite sized chunks.
Step 2
Cut the chicken (or protein of choice) into bite-sized pieces. (If using chicken, brine for at least 1 hour).
Step 3
Wash and rinse shirataki noodles under cold water. Let sit in sink while prepping other ingredients.
Sauce
Step 4
Mix sauce ingredients together, freshly crushing/grating the garlic and ginger in.
Cooking
Step 5
Heat a pan to medium high heat and add cooking spray.
Step 6
Add chopped chicken, seasoning with pepper (and salt, if not brined). Cover and fry for about 90 seconds.
Step 7
Add chopped onion and stir everything for 1-2 minutes for color. Do not fully cook the chicken. Set aside and return pan to heat.
Step 8
Without ANY oil, add shirataki noodles and fry for 2-3 minutes, until noodles begin to get slightly crispy.
Step 9
Add protein and onions and stir. Add sauce and stir fry for about 1 minute.
