Instructions

Preparation

Step 1
Soak the rice cakes in warm water for 30 minutes (an extra 10 mins to the directions on the bag). Soak the shitake mushrooms separately in a small bowl up to around the same time in warm water, to rehydrate. Remove once they are soft enough to cut, or they will lose flavor.
Step 2
Mince the garlic and ginger, thinly slice the carrots on a diagonal, and thinly slice the mushrooms and green onion.

Marinate the beef. Add the minced garlic.

Stir Fry

Step 4
Heat up the wok on high heat. When ready, add oil with a high smoke point. Add the marinated beef and stir fry until nearly cooked through.
Step 5
Add the ginger, carrots, mushrooms, and kale. Stir fry for another couple minutes.
Step 6
Drain and rinse the rice cakes and toss in, along with the stir fry sauce. Add water to further soften if needed. You can also use the water from soaking the mushrooms for flavor.
Step 7
Lastly, garnish with green onions
