Step 1
Cut potatoes in small chunks, cover with broth or water. Season with salt and pepper.
Step 2
Cut up bacon into bite size pieces and cook to your liking. Put about half the bacon inside the pot with the potatoes once they are about half boiled.
Step 3
Use the bacon oil to cook your carrots, onion and celery in. When almost cooked, throw in garlic. Put this mixture in with your potatoes.
Step 4
Once potatoes are fully cooked, add milk and cheese. The cheese will help thicken it. Cook until soup is the thickness you want. Add half of the remaining bacon.
Step 5
Garnish with leftover bacon, chives, cheese and sour cream.
