Instructions

Step 1
Thaw and drain spinach well, set aside.
Step 2
Preheat oven to 350 F.
Step 3
Grease a 9x13" baking dish.
Step 4
Grate 1 pound cheddar cheese (or use pre-shredded), set aside.
Step 5
Combine the eggs, milk, flour, chopped onion, salt and baking soda; mix well.
Step 6
Add the cheese and spinach to the mixture and stir to combine.
Step 7
Pour the mixture into the baking dish, sprinkle with seasoned salt if desired.
Step 8
Bake for 40 minutes, cool and cut into squares.
Step 9
Note: These freeze really well.
Step 10
Note: These are fantastic served warm with salsa.
