Instructions
Step 1
1. Sprinkle gelatine over water in a small bowl. Leave to stand for 10 minutes.

2. Dissolve gelatine over a pan of hot water and cool slightly.
Step 3
To microwave: Cook for about 30 seconds, stirring every 10 seconds, until dissolved. Cool slightly.

3. Put sugar, lemon rind and milk into a saucepan.
Step 5
4. Stand over a very low heat until sugar dissolves.
Step 6
5. When gelatine and milk are both lukewarm, combine by pouring milk gently on to gelatine.
Step 7
6. Stir well and tint pale yellow with colouring, if used.
Step 8
7. Pour into a 900 ml (1½ pint) mould, first rinsed with cold water. Refrigerate until set.
Step 9
8. Turn out on to a plate to serve.
Orange Milk Jelly
Step 10
Follow recipe and method for lemon milk jelly (above) but use grated orange rind instead of lemon rind and colour pale orange with orange food colouring.
Coffee Milk Jelly
Step 11
Follow recipe and method for lemon milk jelly (above) but omit lemon rind and colouring. Instead, add 10ml (2tsp) instant coffee granules to milk.
