How to: Coconut Yogurt

Now that you know how to make a creamy coconut milk, you might want to try out making your own coconut yogurt.
All you need is coconut milk, specific probiotics and a warm place for the bacteria to feast and multiply.
To make yogurt we need these two bacteria strains, Lactobacillus and Streptococcus thermophilus.
Vegan yogurt cultures are now readily available to buy online, and I recommend buying the culture during the cold months as shipping in the summer heat can be alter the composition of the bacteria.
I personally don’t stick to one culture brand, I just look for plant based culture with no additives like rice flour, anticaking agents or maltodextrin, and has the strains of bacteria I need.
The brand I have been using this year is NPSelection.
Tip: If your milk is too runny, you can make a slurry of 1 tablespoon of tapioca starch and enough water to mix it.
The next step would be to add the slurry when heating the milk up, whisk until it thickens.
Tip: Plant based yogurt are not as sour as its dairy alternative.

Instructions
Step 1
Measure your milk and warm up to 40 degrees.
Step 2
Take a couple of spoons of of the milk, stir in the yogurt culture.
Step 3
Pour that cultured milk back into the milk and stir.
Step 4
If you have a dehydrator or a yogurt making machine, place the yogurt in a tempered glass dish/jar, place in the dehydrator on a temperature of 46 degrees, for 12 hours.
Step 5
If you do not have a dehydrator or a yogurt maker. Cover the yogurt mixture, and wrap it in a towel to keep it warm and away from sunlight. And place in a warm place for 12-24 hours.
Step 6
After the 12 hours, you will notice the yogurt separated. That’s completely normal. Stir the yogurt together. And place in the fridge for a minimum of 4 hours.
Step 7
After the 12 hours, you will notice the yogurt separating giving you a thick yogurt bit and water bit. That’s completely normal. Stir the yogurt. And place in the fridge for a minimum of 4 hours.
Step 8
And that’s it, your yogurt is ready to enjoy.
