Step 1
Begin with getting a pan on a medium heat and addling 1/2 tbsp of oil. Once hot add the parma ham, cooking for 2-3 minutes turning often until crispy. Put on paper towel to soak up any excess oil.
Step 2
Crack 2 eggs and separate the yolks. Place in a glass bowl and add the vinegar.
Step 3
Melt the butter.
Step 4
Get a pot of water onto a light simmer and place the glass bowl on top. Whisk the eggs continuously whilst slowly pouring in the melted butter. Make sure to keep stirring and don't let the water get too hot. The eggs will separate from the butter and scramble. Once you have a smooth, thick hollandaise, season with salt and pepper, squeeze in a little lemon juice and put to the side.
Step 5
Add the a tsp of vinegar to the water and stir with a wooden spoon creating a whirlpool. Crack the egg into a small bowl before placing in the water (it helps to hold it together instead of cracking it straight into the water.)
Step 6
Toast the bagel.
Step 7
Assemble, crack over salt and pepper and garnish with a little smoked paprika.
