Fried banana and peanut butter bites

Instructions

Step 1
Cut banana into even number of slices. I did about 12, not including the pointy bits.
Step 2
Dab a thin layer of peanut butter and small chunks of chocolate onto half of the slices. Peanut butter just needs to be thick enough to glue the banana pieces together.
Step 3
Combine 1/4 cup of flour with a teaspoon of cinnamon, ginger powder and cayenne. Whisk together.
Step 4
I’m a separate bowl, whisk together one egg and a splash of water.
Step 5
Gently squeeze together a blank slice of banana with a loaded one so that they stick together without crumbling.
Step 6
Heat 1/4 inch of canola oil on medium to high heat.
Step 7
Dip banana sandwiches in flour mixture until covered, then into the egg wash, then back into the flour mixture.
Step 8
Place in oil and let fry/sizzle until golden brown, perhaps 2-3 minutes depending on the heat of your oil. Flip or rotate so each side of the sandwich bite gets brown.
Step 9
Remove bites from oil with tongs or slotted spoon and place onto plate with a paper towel.
Step 10
Sprinkle immediately with sugar and cinnamon.
Step 11
Eat and enjoy!
