Step 1
Half the squash, create a flat standing side.
Step 2
Spread squash with the melted butter the garlic salt, and sage
Step 3
Bake cut side up at 400 degrees for 1 hour.
Step 4
Brown sausage, remove from pan. Saute onion and celery 4 minutes. Stir in cranberries and spinach. Combine all, stuff squash. Bake 20 minutes covered.**I use a variety of veggies for stuffing including peppers, kale, peas, broccoli, asparagus, etc., and usually use more butter as well***DELICIOUS variant: chorizo (used dos mamacitas veal chorizo) with acorn squash and the acorn/delicata squash, with kale, green pepper, onion, and dried cherries… YUM!!
