Instructions

Step 1
Put the cashews and 1 cup of broth into a blender and blend till smooth

Step 2
In a large pot combine potatoes and leeks and remaining 4 cups of broth, bring to a simmer over medium heat. Cover and boil til tender, about 10-15 minutes
Step 3
Add cashew mix, Parsley, lemon, salt, and pepper to the soup, simmer and cook, stir often until thickened (2 minutes), then transfer to blender and blend till smooth.
Step 4
Serve and enjoy! Add cheese and bacon bits on top:)
