Ingredients

6 ouncesfrozen chopped spinach
thawed and drained
1 cupricotta cheese
2 tablespoonssour cream
½ cupgrated parmesan cheese
½ cupshredded cheddar cheese
4eggs
¼ cupmilk
¼ teaspoonhot pepper sauce
1 teaspoonground cumin
¼ teaspoonground black pepper
½ teaspoonlemon pepper
2 tablespoonsdried parsley
3 tablespoonssalsa
Instructions
Step 1
Preheat oven to 375ºF. Lightly grease on 12-cup muffin tin.
Step 2
In a medium bowl, combine spinach, ricotta cheese, sour cream, Parmesan cheese, and Cheddar cheese.
Step 3
In a small mixing bowl, beat eggs, milk, hot sauce, cumin, black pepper, parsley, and lemon pepper. Stir egg mixture into spinach mixture.
Step 4
Spoon mixture into the prepared muffin tin. Bake in preheated oven for 20 to 25 minutes. Let stand for 5 minutes. Remove from muffin cups. Serve warm.
