This is a Family recipe that has been passed down on my husband’s Danish side of the family for many generations. Aebleskiver are delicious bite sized Danish pan fried snacks that are very similar to pancakes with a crispy, buttery crust. These are cooked in a special cast iron Aebleskiver pan in butter on the stovetop. Serve warm, dusted with sugar, cinnamon, and cardamom or dusted with powdered sugar.

Instructions

Step 1
Combine the egg and sugar and whisk until combined.
Step 2
Sift dry ingredients together and add to your egg and sugar mixture.
Step 3
Add buttermilk to your mixture and mix until the batter is smooth.
Step 4
Heat the Aebleskiver pan on the stovetop over a medium-low heat and then drop a small pinch of butter into each well.
Step 5
Pour the batter into each well until it is almost full. Let the batter cook until it has become puffy and the edges are golden brown. **You can add something to the inside like a dollop of jam, brown sugar, or a traditional small slice of apple to the center of you would like, but these are delicious plain so it’s totally up to your discretion.
Step 6
Using a wood skewer to poke the Aebleskiver and loosen it from the pan so you can flip it over to cook the other side until golden brown.
Step 7
Remove from the pan and dust the outside with powdered sugar, dip in maple syrup, roll in a combination of cinnamon, sugar, and cardamom, or just eat them plain. Serve warm and enjoy!
