Garlic Mayonnaise
Chicken Fillet
1chicken breast
plain flour
2eggs
panko bread crumbs
1 Tbspsmoked paprika
1 Tbspchicken seasoning
1 Tbspdried oregano
1 tspchilli powder
salt
pepper

Instructions
Step 1
Begin with making the mayonnaise. Finely chop the garlic and crack 2 eggs.
Step 2
Separate the yolks from the whites and place in a mix bowl. Whisk well and add the garlic. Keep whisking whilst slowly adding the oil, it will begin to emulsify. Add the lemon, dijon, vinegar and keep stirring whilst adding the oil. Once you have a smooth, thick mayonnaise, seasoning with salt and pepper to taste and leave in the fridge.
Step 3
Prepare the fillings for the sandwich, slice the tomatoes, lettuce and red onion. Grate the cheddar.
Step 4
Take the chicken breast and butterfly by slicing open into two.
Step 5
Crack and whisk the eggs. Add the flour to a bowl and season with salt and pepper. Add the bread crumbs to a separate bowl and mix well with the seasonings.
Step 6
Place the chicken into the flour and evenly coat. Shake off the excess and then place into the eggs, followed by the bread crumbs.
Step 7
Get a pan on a medium-high heat and add 1/2 inch of oil. Once it comes up to 170c/340f lay in the chicken. Fry on both sides for 4-5 minutes until golden brown on both sides. Remove from the oil and season with salt.
Step 8
Place the baguette into the oven to warm through and slice the chicken into strips.
Step 9
Butter the roll, add the mayonnaise and build the sandwich.
