SAUCE: In sm. bowl, mix together soy sauce, honey, olive oil, ginger, & water.
Step 2
Add a pinch of each salt & pepper to chicken; cook in med. skillet until cooked through.
Step 3
Add chopped onions, broccoli florets, & garlic to pan; cook a few minutes longer.
Step 4
Add cashews & pour sauce into pan; stir well, reduce heat to low, & simmer.
Step 5
Serve chicken with cashew nuts over white or brown rice.

SALT: I use low sodium soy sauce in this recipe. If you use regular soy sauce, don't add salt to the chicken because you might find the dish to be too salty. I would suggest tasting it and adding salt if you feel it is necessary.
Step 8
SOICE: If you like your cashew chicken to be a little spicier, add a pinch or two of crushed red pepper flakes. A little goes a long way.
