Combine all ingredients in a large stainless steel pot. Cook over medium-low heat 25 minutes or until the apple is very tender, stirring occasionally. Press apples through a food mill (we use the largest hole attachment). If you do not have a food mill you can use a potato masher or a food processor until you get the desired consistency. The food mill is a much better option. Reheat the applesauce if it has cooled down while you are mashing. Ladle the hot applesauce into hot pint jars, leaving 1/2 inch head space. Remove air bubbles and wipe the jar rims clean with a damp paper towel. Apply lids and bands. Place jars on the rack and lower into the boiling water canner. Process jars for 20 minutes. Turn off the heat, remove the lid and let the jars stand in the water for 5 minutes. This allows any air bubbles to escape. Remove jars, blot the lids gently with a paper towel to remove any standing water and let cool.
