Instructions
Step 1
1.) Cut 1.5 lbs of pork loin into 1.5 in cubes.

2.) Using the point of your knife cut a small incision into each cube and insert a whole

4.) Turn Instant Pot to the sauté function and allow it to heat up. Once it tells you it’s hot add 1 tbsp of olive oil.

5.) Sear each pork cube about 2 min each side until you get a nice golden brown char. Remove them from the pan and set aside in a bowl. They are not throughly cooked just yet!

6.) Add 1 cup of chicken broth and using a wooden spatula or spoon gently scrap the bits deglazing the instant pot pan.

7.) Add pork back into the pot once all the bits have been scraped off. Add more chicken broth so that your pork is just barely submerged.

8.) Add 1 tbsp of liquid smoke.

9.) Switch the setting on the instant pot from sauté to pressure cook. Close the lid securely and cook on high pressure for 11-12 min.

10.) Allow the pressure to release naturally for about 20 min before manually removing the rest and then taking the lid off.

11.) Using two forks, shred up your pork. It will literally fall apart. Allow it to sit in the juices while cooling and before storing.
