The Meat
1 lblean ground beef
1 lblean ground lamb
2garlic cloves
lrg, minced
1 Tbspdried oregano
1 Tbspground rosemary
2 tspsalt
½ tsppepper
Tatziki
Instructions
Step 1
Chop onion. Place in a cheese cloth and squeeze all the moisture out.
Step 2
In large bowl, mix lamb, beef, garlic, oregano, rosemary, salt, pepper and onion.
Step 3
Run small portions through a food processor for approximately 1 minute to homogenize then press into a loaf pan.
Step 4
Place loaf pan into a water bath and bake @ 375°F for 1 hour.
Step 5
Drain grease (may want to reserve some for later) then compress the loafs while cooling (can be done with a brick - or some large cans from the pantry)
Step 6
Once cooled, slice thin strips of the loaf and place in a warmed skillet to get a textured skin. (This is when the reserved "juices" come in handy to keep the meat from sticking)
Tatziki
Step 7
Grate cucumber and spread out on a flat surface.
Step 8
Sprinkle with salt and weight for approximately 30 minutes.
Step 9
Transfer grated cucumber to a cheese cloth and squeeze dry.
Step 10
Combine sour cream, garlic, olive oil and cucumber. Mix well.
Step 11
Serve with pita, onion, tomato, & feta! 😛
