Instructions

Step 1
Hard boil egg
Step 2
Peel potato and cut into small cubes. Boil until soft
Step 3
Preheat oven to 180c (fan forced)

Line a baking tray with baking paper
Step 5
Heat oil in a large frying pan over a medium heat. Cook onion and garlic for 5 minutes until onion softens.
Step 6
Increase heat to high. Add beef and cook, stirring to break up lumps until brown.
Step 7
Stir through spices and cook until fragrant.
Step 8
Add the stock, potato, tomato paste and sultanas. Simmer for 3 minutes until sauce thickens.
Step 9
Stir through hard boiled egg and olives. Season to taste. Allow to cool.
Step 10
Cut pastry in to 16 squares. Place filling in each square and fold to close. Pinch edges to seal.
Step 11
Place empanadas on baking tray with seam up. Brush with egg.
Step 12
Bake for 30 minutes until golden. Turn during cooking if needed to cook pastry evenly.
