Instructions

Step 1
In a pot, melt the butter over medium heat. Add the water, salt, sugar, and vanilla extract to the melted butter and bring the mixture to a boil. Add the pumpkin purée and mix.

Step 2
Add the all purpose flour to the mixture and mix until a dough forms, remove from heat and add the eggs being careful not to scramble them.

Step 3
Transfer the mixture to a piping bag fitted with a star tip.
Step 4
Fill a pot with some oil and heat to 190 C (375 F).

In a bowl, combine sugar, cinnamon, nutmeg, ginger, and cloves.

Step 6
Once oil is hot, pipe 5 inch long strands of the batter into the oil and snip with scissors. Fry until golden brown (~6 minutes), drain excess oil onto a paper towel, then toss the churros in the pumpkin spice mixture.
