Ingredients

1 x 750mldry red wine
pick an inexpensive one
59.5mlapple cider
¼ cupbrown sugar
other sweeteners like honey or maple syrup may be used as substitutes and adjusted to taste
1orange
sliced
3allspice berries
whole Mexican Allspice
5cloves
whole from Madagascar
0.5whole nutmeg
from Madagascar
2cinnamon sticks
freshly ground
1cardamom seed
whole, crushed
3star anise
Instructions
Step 1
TIP: Prep the spices. Bring out the full flavours of your spices by toasting them before grinding. Just put your spices in a small skillet over medium-low heat, and shake the pan occasionally to prevent burning. You will know when they are ready by the fragrant aroma.
Step 2
After toasting grind the desired amount of each spice needed for the recipe - be generous with the grinding but take care not to add too much to this recipe. A little spice goes a long way.
Step 3
Combine wine, apple cider, brown sugar, and orange slices in a medium saucepan and mix in freshly ground allspice, Ceylon cinnamon, cloves, nutmeg, cardamom, and star anise. and simmer over lower heat for about 10 minutes
Step 4
NOTE: do NOT bring to a boil. Simply simmer slowly to warm the ingredients and allow the flavours to meld.
Step 5
When ready, pour into serving glass or mug and add extra fruit peels, star anise and/or cinnamon sticks to top off as a beautiful garnish.
