Instructions
Step 1
Heat the oil in a 4-5 quart pot over medium heat.
Step 2
Add the onions and curry powder.
Step 3
Cover and cook 4 minutes.
Step 4
Add the broth, cauliflower, salt, and 2 cups water to the pot.
Step 5
Bring the soup to a simmer, stirring occasionally. Cover the pot & simmer 15 minutes, stirring occasionally. .
Step 6
Puree the soup in a blender of food processor and return to the pot. Reserve 2 tablespoons of the zucchini.
Step 7
Stir the rest of the zucchini into the soup and reheat.
Step 8
Ladle the soup into 4 soup bowls and garnish with the reserved zucchini.
