Instructions
Step 1
Blend the 1 cup of frozen wild blueberries, 1 cup mango, 1 cup dates in a blender until smooth
Step 2
2. For crust: Process the 2 cups of dates, 1 cup of mulberries, 1/4 of shredded coconut in a food processor until well combined.
Step 3
3. Line a mini cupcake tray with plastic wrap enough to hang over on edges, for easy removal. and press crust into each mold. Making 6-8 bases.
Step 4
4. Spoon filling into each cup and top with a blueberry. Place in the freezer to set for 1-2 hours.
Step 5
For apple tart filling: refer to cleanse to heal page 336 Filling:
3 apples, cored and diced 2 to 3 medjool dates, pitted ⅛ teaspoon cinnamon
Pinch of nutmeg 2 teaspoons fresh orange or lemon juice Topping:
½ apple, very thinly sliced ½ teaspoon cinnamon 1 to 2 teaspoons raw honey (optional)
Step 6
Serve immediately or keep in the fridge or freezer for later.
