Instructions
Step 1
clean the mussels by pulling off any visible beardand knock of any obvious barnacles. Place in a colander and rinse just to make sure any sandy nastiness is removed.
Step 2
Add saffron to the wine and allow it to set for 10 min
Step 3
Cut the chorizo in wedges
Step 4
Over low heat, warm up the olive oil and melt the butter in a large saucepan
Step 5
Add the chorizo, onion, garlic and tomatoe paste; cook and stir until the chorizo is cooked
Step 6
Grind the tomatoes, thyme, rosemary, basil and lemon juice and zest altogether and add to the pan
Step 7
Add the wine with the saffron, stir until combined and cook until warmed through, approximately 5 minutes
Step 8
Add the mussels and cover with a lid, allowing to steam for 6-8 minutes, or until all shells have opened; discard any unopened shells
Step 9
Split the mussels and broth between plates, and serve with toasted bread
