Step 1
Bring a pot of salty water to a boil; add gnocchi, draining when they float. (Reserve 1C of water that gnocchi was boiled in.
Step 2
Add olive oil to a med. frying pan; simmer garlic, onions, & peppers until just fragrant. Add gnocchi, spreading out.
Step 3
Nestle butter into pan & melt. Gently flip gnocchi over, allowing them to just brown. Remove from pan with however much veggies go with it. (If using fresh herbs, sprinkle on top.)
Step 4
To skillet (with any remaining veggies) add 2-4T tomato paste & about 1/2 cup gnocchi water. Stir, adding red pepper & Italian herbs. Cook until sauce turns orange, adding gnocchi water as needed.
Step 5
Turn off heat, add gnocchi back in & add gnocchi water as needed to coat. Serve topped with cheese, if desired, and topped with fresh ground pepper.
