1whole chicken
cooked, deboned and cut into bite size pieces
1rice
uncooked
⅔ cuponion
chopped
⅔ cupcelery
chopped
⅔ cupgreen bell pepper
optional
⅔ cupmayonnaise
1 cupschicken broth
or as needed more
2eggs
boiled and chopped
1cans cream of mushroom soup
or 1 can mushroom and 1 can chicken
1can mushrooms
drained, or fresh
salt
to taste
pepper
to taste
Instructions
Step 1
Cook chicken in water, remove chicken to cool, reserve stock. Cook rice in chicken broth. Sauté onion celery, bell pepper and fresh mushrooms in butter. Mix chicken, cooked rice, soup, mayonnaise, vegetables, hard boiled eggs, salt and pepper. And additional broth if needed. May add small amount of milk. Pour into casserole and bake for 30 - 50 min.
