Cook chicken in water, remove chicken to cool, reserve stock. Cook rice in chicken broth. Sauté onion celery, bell pepper and fresh mushrooms in butter. Mix chicken, cooked rice, soup, mayonnaise, vegetables, hard boiled eggs, salt and pepper. And additional broth if needed. May add small amount of milk. Pour into casserole and bake for 30 - 50 min.
