Instructions
Step 1
Heat oil on a low heat
Step 2
Chop onion, carrot and celery into small cubes.
Step 3
Add onion to oil and sweat for 5 minutes before adding the carrots, garlic and celery then sweat for a further 10 minutes or till slightly soft.
Step 4
Stir puree into veg mix and cook out for a few minutes
Step 5
Add the 2 cans of chopped tomatoes with the sugar, balsamic vinegar, a pinch of salt, some freshly ground pepper and the vegetable stock pot.
Step 6
Cover and allow to simmer for 30 mins stir occasionally untill all veg has softened
Step 7
Pulse for a smoother sauce, not too much.
Step 8
Turn heat down to lowest and leave uncovered, stiring constantly.
Step 9
Add a handful of cheese and stir in.
Step 10
Taste and add salt or pepper if needed
