Instructions
Step 1
Combine brine ingredients in large pot. Simmer until sugar and salt are dissolved. Remove from heat and let cool to room temp. Refrigerate until completely chilled.
Step 2
Place brisket in brine. Make sure to keep brisket completely submerged. Refrigerate 5-10 days.
Step 3
Remove brisket from brine and rinse thoroughly
Step 4
Place brisket in large pot and cover with water. Add remaining pickling spice. Bring to boil, then reduce heat, cover and simmer for ~3 hours. Check to make sure brisket remains covered.
