Step 1
Mince the garlic and the shallots as thin as you can.

Peel the potatoes, wash them and mince them too as thin as you can.

Chop the parsley.

Clean the cuttlefish and keep the sack on a side and the tentacles on another.

Mince the cuttlefish tentacles as thin as you can.

Take a small pan, put it on the stove an put some olive oil in it. When the oil is hot ease down everything we minced so far. So put the cuttlefish tentacles, the garlic, the shallots, the parsley and the potatoes in the pan.
Stir, add a couple of spoon of white wine and stir again. Cook as long as it takes to make the potatoes really soft. It should take about 15 minutes. If the mixture is too dry add some more white wine or water.
When all the ingredients are well done, ass some salt and pepper, mix and let it cool for ten minutes.

When the mixture we prepared is cool, put it into a bowl and the breadcrumbs. Mix with a spatula until the breadcrumbs are all absorbed. If the mixture is too wet, add some more breadcrumbs.

Take the cuttlefish sack now and stuff them with the mixture. When the sack is almost full, fold the top part and close it with a toothpick. Do not over stuff the fish too much since in the oven, the fish tend to shrink. If there is to much stuffing in it, it will then come out or break the sack.
Step 9
Pour some white wine in a baking dish and put all the stuffed cuttlefish in it. Cook the fish in the oven for about 40 minutes at 200"C
