Spicy Scallops with Watermelon Salsa

¼ teaspoondry mustard
¼ teaspoonground coriander
¼ teaspoononion powder
¼ teaspoongarlic powder
¼ teaspooncayenne pepper
¾ teaspoonblack pepper
¼ teaspoonsalt
crushed, divided
1.25 poundsea scallops
large
2 tablespoonsolive oil
divided
2 cupswatermelon
diced
2 tablespoonsred onion
minced
¼ cupmint
chopped, divided
2 tablespoonsfresh lime juice
divided
2 cupsquinoa
cooked
2 tablespoonspine nuts
¼ cupscallions
sliced
Instructions
Step 1
1. Combine mustard, coriander, onion powder, garlic powder, cayenne, black pepper and 1/8 teaspoon salt in a bowl
Step 2
2. Pat scallops dry with a paper towel, sprinkle with spice mixture
Step 3
3. Heat a large cast iron skillet over medium high heat. Add 2 teaspoons olive oil to the skillet, swirl to coat. Add scallops, cook to desired degree of doneness, 1 to 2 minutes per side
Step 4
4. Toss together watermelon, onions, 2 tablespoons mint, one tablespoon lime juice, 2 teaspoons olive oil and remaining salt in a bowl
Step 5
5. Combine quinoa, pine nuts, scallions, remaining two teaspoons olive oil, remaining 2 tablespoons mint and remaining one tablespoon lime juice
Step 6
6. Serve scallops over quinoa mixture and top with salsa
