Blackberry Yogurt Coffee Cake | Fake Food Free
This is tasty--as its name indicates, it's great with black coffee! But you may find it far too rich as written. Next time I'll cut butter by half (i.e. use 4 tbsp. in the cake itself, and 2 tbsp. in the topping). I added 1/2 cup toasted walnuts to the topping ingredients, which isn't listed but appears in the photo, and is a great addition. I also used plain 2% greek yogurt and added a splorp of raw honey, and 1/4 tsp ginger, which was a nice pairing with the ground cloves.
As always, if you don't have white whole wheat flour on hand, use half whole wheat and half all-purpose.
One last note: in the original recipe, I took the word 'mascavo' to mean dark brown sugar--guessing the author meant 'muscovado'?.
Enjoy!!
