140gbrown sugar

1 Tbspvanilla extract

2eggs

375gplain flour

1 Tbspcornstarch

½ tspbi-carb soda

1 tspbaking powder

1 tspsalt

100gdark chocolate
roughly chopped

100gwhite chocolate
roughly chopped

100gmilk chocolate
roughly chopped

Instructions
Step 1
Cream the butter, caster sugar, brown sugar and vanilla until light and fluffy.
Step 2
Add the 2 eggs and beat to combine.
Step 3
Add the plain flour, cornstarch, bi-carb soda, baking powder, salt and chocolate and mix until barely combined.
Step 4
In a small bowl, combine the caster sugar, cinnamon and salt.
Step 5
Roughly form the dough into large 80g balls then roll them in the cinnamon sugar. Place the cinnamon sugar rolled balls onto a paper-lined baking tray and place them into the fridge to rest for at least 1 hours and up to 24 hours.
Step 6
Preheat the oven to 200℃. Arrange and evenly space about 5 of the rested dough balls onto a baking tray, allowing room around the dough balls to flatten while baking. Bake for 10 minutes.
Step 7
Remove from the oven and allow the cookies to cool for 30 minutes.
