Crustless Quiche

This is something my husband and I make when we want breakfast for dinner, but don't want something super heavy. I am sure my southern ancestors will hunt me for saying this, but like biscuits and gravy or pancakes. It is different, but still gives us our breakfast fix. Customize it to your family. This is just what our family likes.

Step 1
Preheat oven to 350°F (175°C). Then line a couple of pie pans with parchment paper. Set aside.

While your oven is heating up cook ground sausage until done.

Once your ground sausage is fully cooked, drain the grease, put on low to medium heat, and mix the cream cheese in.

Once your cream cheese is mixed in with the ground sausage. Take off of heat and pour on the lined pie pans with parchment paper. Spread out until it covers the bottom completely.

Once the ground sausage mixture is spread. Start layering the veggies. Start with the fresh spinach, spread over top of sausage mixture.

Then spread your sliced mushrooms, sliced bell pepper, and chopped cherry tomatoes

Then spread your diced purple onion, then pour your scrambled eggs (raw) over everything. Then add the shredded cheddar cheese.

Once you have everything in your cake pan, place in the oven until eggs are fully cooked. Usually takes about 45 minutes. But it differs for every oven.

Once cooked, cut up and enjoy. This will work great for meal prep too.
