Instructions
Step 1
Preheat your oven to 350 and grease a 9x12 baking dish
Step 2
In a mixing bowl, mix the rotisserie chicken, softened cream cheese, cheddar cheese and garlic powder. If your cream cheese isn’t softened, microwave the mixture for 30 seconds and mix until well combined. You can half the cream cheese quantity if you want yours less cheesy
Step 3
Put the chicken filling on each tortilla and roll them
Step 4
In a skillet over medium heat, brown both sides of the roll ups then place in your greased baking dish. This step is important and will prevent the tortillas from getting soggy
Step 5
In the same skillet over medium heat, melt your butter. Once melted. Stir in taco seasoning and flour
Step 6
Add chicken broth and continue stirring until no longer clumpy
Step 7
Slowly whisk in pepper jack cheese. Save 1/2 a cup to top the tortillas
Step 8
Whisk in sour cream and rotell until well combined
Step 9
Once well combined, top your tortillas with the cheese sauce. Top the dish with the remaining pepper jack cheese
Step 10
Bake at 350 for 23 minutes and broil for an additional 2 minutes
