Instructions

Step 1
Add oil and rice to a skillet and toast on medium heat until golden
Step 2
Add tomatoes, onion, garlic, and 1 cup of water to a blender, and blend until smooth
Step 3
Once rice is toasted add blended mixture, chicken bouillon, and 2 cups hot water to the pan and stir to combine. Bring to a bubble, cover pan with foil and lid, recipe heat to low and simmer 20-25 minutes
Step 4
In separate skillet add 1 TBS oil, half the chicken, and half of the taco seasoning, and cook over medium heat until chicken is cooked though. Transfer to a plate and cooking the remaining chicken
Step 5
Remove rice from heat, remove lid, and left stand for 5 minutes before fluffing with a fork
Step 6
Serve rice and chicken with cilantro, pepper Jack cheese, and a lime wedge
