Roll-out Sugar Cookies

Instructions

Step 1
Cream margarine and sugar together until smooth and creamy
Step 2
Add eggs one at a time and beat until lemony yellow and smooth.
Step 3
Add salt and baking soda to flour. Add flour mixture to creamed margarine, sugar and egg mixture. Stir by hand until smooth (as little as possible).
Step 4
Form into 2 long rolls and wrap in heavy waxed paper. Place in refrigerator 12-24 hours.
Step 5
Flour hands and roll out on floured waxed paper or pastry sheet to form thin dough. Handle dough swiftly to keep tender. The first 2 rounds of rolling out can be very difficult. Using a lot flour helps, but will likely toughen the dough. Use cookie cutters; place on ungreased cookie sheet.
Step 6
Bake in preheated 400 degree oven for 5 minutes or until lightly browned. Remove immediately from cookie sheet. Cool and ice.
Step 7
To make frosting, combine 3/4 c powdered sugar, 1T orange juice, 1T melted butter, 1/2 t finely grated orange rind, stirring with a fork, to a fairly thin consistency. Frost cookies. immediately add sugars. Should make dozens.
