500glamb chunks

3 Tbspolive oil

2onions

1Leeks

1cauliflower

3carrots

2sweet potatoes

1 tspground nutmeg

1 tspsmoked paprika

1 tsppaprika

1 tspground cumin

1 tspground coriander

1 tspground cinnamon

1 tspground turmeric

½ tspsea salt

1 tspground black pepper

½ tspground ginger
Instructions
Step 1
Combine spices and meat together in pan with a glug of oil. Seal both sides of meat.
Step 2
Add chopped onions and leek, and stir. Allow to cook for 3 mins. Stir infrequently.
Step 3
Scatter sliced carrots on top of mixture. Line around with potato chunks.
Step 4
Top with peeled garlic and chopped coriander.
Step 5
Pour boiling water until ingredients just immersed. Allow to boil then turn heat right down and cover with a lid.
Step 6
Allow to slowly cook until meat is tender. Approximately 1 hour but check every 30 minutes to avoid drying out.
Step 7
Once cooked serve with warmed bread.
