Blended beans are a clever way to add nutrition and bulk to a South African classic without changing the texture of the dish. This recipe uses butter beans, as their mild flavor and creamy texture disappear perfectly into the spiced beef mince.

Ingredients

The Base
500glean beef mince
1 x 400gcan butter beans
rinsed and drained
1onion
large, finely diced
1slice bread
crust removed
½ cmilk
for soaking bread
The Spices & Flavours
2 Tbspcurry powder
mild or medium
1 tspturmeric
2 Tbspfruit chutney
1 Tbspapricot jam
or brown sugar
1 Tbsplemon juice
or vinegar
½ cupraisins
salt
to taste
white pepper
to taste
The Custard Topping
Instructions
Step 1
Prep the Bread & Beans: Soak the bread in 1/2 cup of milk for 5 minutes, then mash it into a paste. Meanwhile, place the drained beans in a blender or food processor and pulse until smooth (you can add a splash of water if needed).
Step 2
Sauté the Aromatics: Heat a little oil in a large pan. Sauté the onion and garlic until soft.
Step 3
Brown the Meat & Spices: Add the beef mince and cook until browned, breaking it up with a spoon. Stir in the curry powder and turmeric, cooking for 1 minute until fragrant.
Step 4
Mix the Fillers: Stir in the blended bean paste, the soaked bread paste, chutney, jam, lemon juice, and raisins. Season well and simmer for 5–10 minutes to let the flavours meld.
Step 5
Assemble: Transfer the mixture into an oven-safe dish and smooth the top.
Step 6
Add the Custard: Whisk the eggs and 1 cup of milk together. Pour this gently over the meat. Arrange bay leaves on top.
Step 7
Bake: Bake at 180°C (350°F) for 30–40 minutes until the custard is set and golden brown.
Step 8
Serving Suggestion: Serve with yellow rice (rice cooked with turmeric and raisins) and a side of extra fruit chutney.
