Ingredients
4 servings
12 ozchicken breast
raw
1 cupsalsa
½ cupwhite jasmine rice
cooked
½ cupblack beans
drained and rinsed
1 cupred bell peppers
minced
1 cupyellow onions
minced
4 cupslettuce
shredded
4 Tbspolives
chopped
4 ozguacamole

Instructions
Step 1
Place chicken and salsa together in a crockpot, cook on high for 3 hours, or in a pressure cooker for 18 minutes, closer to 23-25 if the chicken is frozen
Step 2
Shred and then cook an additional hour.
Step 3
Cook rice according to the directions on the package. Sauté the red peppers and onions in a pan until tender. Set aside.
Step 4
For one serving, layer: 1 cup shredded lettuce, 2 Tbs. cooked rice, ¼ of the salsa chicken, 2 Tbs. black beans, ¼ of the sautéed peppers and onions, 1 Tbs. olives, 1 oz. guacamole, 1 Tbs. cashew sour cream, jalapenos and green onions. Enjoy!
