Ingredients

0.5 lbsmoked sausage
cut into 1/2 inch slices
1sweet potato
medium-sized, peeled and cut into 1/2-inch cubes
1 cupcabbage
coarsely shredded
½ cupgreen pepper
chopped
½ cupcelery
chopped
½ cupchopped onion
1 x 14.5 ozcan diced tomatoes
undrained
1 x 15.5 ozcan black eyed peas
undrained
1 x 13.75 ozcan low sodium beef broth
1 cuptomato juice
½ teaspoonsalt
¼ teaspoonground black pepper
Instructions
Step 1
In a 4-quart stock pot, combine all ingredients. Bring to a boil over medium-high heat. Cover, reduce heat, and simmer for 30 minutes, stirring occasionally. Serve.
