The veggies should be easy to swap with any others you have around. I used hazelnut milk, though any should do.
I like things salty, but if you don't the added salt will likely be too much for you.

Add everything else

Mix well, until everything is well incoprated

Bake for 50 - 60 minutes on 400, or until golden brown on edges & veggies are soft.
