OPTIONS I play liberally with this recipe. Here are some things I love: - crustless quiche - just leave it out. Much healthier. - Replace the spinach with mushrooms, the cheddar with swiss cheese - Replace the spinach with chopped broccoli. This is best done with a crust-less quiche as the broccoli takes up more room than the spinach.

Instructions
Step 1
Melt butter in skillet. Add onion, saute until translucent, about 8 minutes. Add spinach and cook until dry - about 3 minutes. Set aside to cool.

Preheat oven to 350.
Step 3
Beat together eggs, cottage cheese, and seasonings. Set aside.
Step 4
In the pie crust, sprinkle both cheeses. Top with the onion/spinach mixture.
Step 5
Pour egg mixture over the spinach. Bake until filling is set, about 50 minutes. Allow to cool slightly before cutting and serving.
