Slow Cooker Pumpkin Chicken Chili
This was surprisingly delicious. Even Mike liked it. And I had to make him eat it.

Ingredients
6 servings

1 lbchicken breast
raw

1 x 15.5 ozcan white beans
drained and rinsed

1 x 15 ozcan pumpkin puree
unsweetened
1 x 15 ozcan diced tomato no salt added
2 ozcans fire roasted diced green chiles

1white onion
medium, chopped

2jalapenos
deseeded and chopped

1 cupchicken broth
low sodium

2 Tbspchili powder

2 tspcumin

1 Tbspcilantro
chopped, for garnish

½ cupcream cheese low fat
Instructions
Step 1
Add all ingredients except for cilantro and cream cheese into a slow cooker.
Step 2
Cover and cook on high for 4 hours.
Step 3
Remove chicken and shred. Return shredded chicken to slow cooker and mix.
Step 4
If you'd like to make your chili creamy, add cream cheese to the slow cooker. Cover and cook for another 30 minutes.
Step 5
Top with chopped cilantro and serve.
