Apple Vanilla Brown Sugar Syrup and Apple Jam

Instructions
Step 1
Toast the spices on a dry pan for about 30 seconds or until aromatic, then set aside.



Step 2
Peel and quarter your apples, removing the seeds.


Step 3
Move your apples and spices into a saucepan, sauté for about 3 minutes, then add the water and brown sugar.







Step 4
Cover with a lid, bring to a boil for 5 minutes, and then lower the heat to a simmer. Stir and tilt the lid over the saucepan occasionally throughout to reintroduce any condensation back into the syrup.
Step 5
Cook for at least 30 minutes or until the liquid has thickened and the apples are fork tender. Add the vanilla in halfway through cook time.

Step 6
Strain the syrup through a fine mesh sieve, pressing down on the apples until all the liquid has been drained and you are left with an applesauce consistency. Note: you like varied texture skip this entirely, but you can use a ricer to break down the apples before straining.

Step 7
Add the syrup to your drink of choice, using about 2 tablespoons per serving. Spread the jam on a toasted baguette with tahini, brie and thinly sliced meat or season with chili oil and spoon over soft tofu for a sweet and savory travel-friendly snack!
