Ingredients

4sausages
Cooked
2potatoes
med, bite-size pieces
1Bell pepper
rough chop
1zucchini
large, cut lengthwise then in large triangles
1yellow onion
medium, large slices
2corn cobs
shucked and cut into large chunks
olive oil
1 tspitalian seasoning
1 tspcumin
1 tspsmoked paprika
½ tsponion powder
½ tspgarlic powder
½ tspsalt
¼ tspground black pepper
Instructions
Step 1
Preheat oven to 400
Grease baking sheet and set aside
OvenPreheat
Step 2
Fill pot with water and add sausage. Bring to a boil then let simmer for 15mins. Rinse with cold water; set aside to cool
Step 3
In a large mixing bowl, add oil and spices; stir to combine
Step 4
Add all vegetables to the bowl with oil and spices except the corn
Step 5
Once sausage has cooled down, cut diagonal (on the biased) medallions and add to bowl with veggies
Step 6
Mix everything together to coat and pour everything onto large baking sheet.
Step 7
Add pieces of corn into bowl that contained veggies amd mix until coated.
Step 8
Add corn to other ingredients in the pan when potatoes are fork tender and bake for another 20mins
