1 cupbutter
sweet cream salted
1 cupgranulated sugar
½ cupbrown sugar
2eggs
1 teaspoonvanilla
3 cupsall-purpose flour
2 ¼ teaspoonscinnamon
1 teaspoonbaking powder
1 teaspoonbaking soda
½ teaspoonsalt
2 cupsraw Carrots
grated or chopped
Cream Cheese Frosting
1 cupchopped pecans

Instructions
Step 1
Grate and chop 2 cups Raw Carrots
Step 2
In a large bowl, cream butter and sugars until light and fluffy.
Step 3
Beat in eggs and vanilla.
Step 4
Mix in cinnamon, baking powder, baking sold and salt and mix well.
Step 5
Add flour and mix until combined.
Step 6
Add in 2 cups of carrots.
Step 7
Bake the cookies in a 375 degree oven for 13-15 minutes or until golden brown around the edges.
Step 8
Allow cookies to cool.
Step 9
Frost with The Best Cream Cheese Frosting.
Step 10
Apply chopped Pecans around the edges of cookies.
Icing
Step 11
In a mixer, combine butter and cream cheese until blended
Step 12
Slowly add powder sugar, then follow with maple syrup, then pie spice
