A healthy chicken casserole with bacon, peas and mushrooms. You can use lower-fat breasts to make it even healthier, but thighs add extra flavour.

Instructions
Step 1
Heat 1 tablespoon of the oil in a frying pan.
Step 2
Season and dust the chicken with flour and fry until brown on all sides.
Step 3
Remove and set aside.
Step 4
Fry the pancetta and mushrooms until softened, then remove.
Step 5
Add the final tablespoon of oil and cook the shallots for 5 minutes.
Step 6
Add the stock and vinegar and bubble for 1-2 minutes.
Step 7
Return the chicken, pancetta and mushrooms to the pan and cook for 15 minutes.
Step 8
Add the peas and parsley and cook for 2 minutes more, then serve.
