Step 1
Slice the chicken breasts from the side in towards the centre but not going through all the way . This is called butterflying . Now the flap should open . Season both sides with salt and pepper then brown both sides in a pan with olive oil and remove for later

To the same pan add chopped garlic and sautés a minute then add halved tomatoes sliced mushrooms halved olives a sliced red chilli then a splash of white wine and let it cook off for a minute . Then add hot vegetable broth salt and pepper and chopped parsley. Let it simmer 2 minutes

Step 3
Add the Chicken breasts back into the pan then coat in the sauce and cover now let it simmer covered for another 10 minutes . Serve with your favorite pasta or rice and add more chopped parsley and enjoy
